Khandvi is a traditional snack from the India state of Gujarat. Its ingredient  are mostly similar to dhokla.This is mainly made with gram flour and yogurt than slowly cooked the batter then thinly spread the paste ,cut and roll them.    

1 cup gram four/ besan
1 cup thick sour curd/yogurt
1 ½ cup water
1/3 tsp turmeric
½ tsp red chilly powder
1 tsp sugar
½ cup fresh chopped coriander
Salt to taste

For temper:
1 tsp mustard seeds
2 tbsp curry leave
4 green chilly chopped
2 tbsp grated coconut

1.In a bowl ,add garam flour,turmeric powder,red chilly powder,sugar,salt and curd and mix well.
2.Now add water and make a thin batter .
3.Boil 1 glass water in the pressure cooker for steam and place the separator in cooker.
4.Now pour the batter in steel bow and steam them for 20 mins on medium flame.
5.Meanwhile , spread the oil on the steel plates or you can spread the oil on your kitchen counter .
6.Now remove the bowl from pressure cooker and nicely mix the batter.
7.Place 2 tbsp paste on the plate and spread the paste thinly as possible while the batter is still hot.
8.when it cool, cut the 2 inch wide strips and sprinkle the chopped coriander over the mixture .
9.Roll them tightly and place on the serving plate.
10.Heat the oil in the pan .
11.When oil became hot, add mustard seeds, green chilly and curry leave .
12.When they splutter, pour the mixture over the pieces.
13.Add coconut in the same pan and roast them for 2 mins and spread roasted coconut over the pieces.

Serve it…….  

                                               Add gram flour,chilly powder,turmeric ,salt ,sugar

                                                         add yogurt

                                                           mix it well

                                                                       add water

                                                         mix well

                                                               place separator

                                                                             pour into steel bowl

                                                    place on pressure cooker

                                                          after steam

                                                          mix it

                                                            1 tbsp mixture on plate

                                                           spread it

                                                                 sprinkle some coriander

                                                                       cur and roll it

                                                                     add mustard seeds chilly and curry leaves in oil

  3. steaming the batter is new to me. i love khandavi. i frnd told me to use aluminum foil if want to save on cleaning plates. still have to try that. great pictures
