Chole recipe/Panjabi chole/ masala chole

Ingredients:
2 cup chickpea (kabuli chana or chole)
¼ tsp khane wala soda
1 ½ inch ginger
5 green chillis
½ tsp cumin seeds( jeera)
½ Kashmiri red chilli
2 bay leaf
5 tamatoes
1 tsp dry kasoori
methi
2 tsp chana masala (homemade)
2 tsp tamrind paste
Chopped Fresh coriander leave for garnish
3 tbsp oil
Salt to taste
Chana
masala ingredient:
1 tbsp cumin seeds (jeera)
2 tbsp coriander seeds
3-4 dry red chilli
1 tbsp anardana seeds
(dried pomegranate seeds)
4 black cardamoms ( badhi elaichi)
3-4 cloves( long)
¼ tbsp black pepper corns ( kali mirch)
1 cinnamon stick (dalchini)
1/8 tsp nutmeg( jayefal)
½ tsp javitri
( Dry roast all ingredient except nutmeg for 4-5 mins and
cool them. Add nutmeg and grind to a
fine powder)
Tamato
paste:
Add chopped tamato,ginger ans green chilli in jar and make a
fine paste.
Method:
1.Wash and soak chana in water overnight.
2. In a pressure cooker add chole, salt ,soda , 3-4 cup
water and cook for 45min in low flam.
3. Heat oil in a vessel .
4. Add jeera and bay leaf in hot oil.
5. sauté till it crackles.
6. Add tamato puree and cook until oil separates
,approx 15-17 mins.(Add 1 pinch of salt,
it makes cooking fast)
7. Add kasuri methi , red chilli and chana masala and mix
well.
8. Add boiled chana (keep aside 2-3 tsp chana and mash, than
mix it with chana) and add left over water.if necessary add another cup of
water and bring to a boil and add tamrind paste.
9. Add salt and cook for 16 -18 mins or till you achieve
slightly thick gravy.
10 .Panjabi chole is
ready.
I loved this curry. A few years ago an Indian coursemate cooked this and brought it to our class party. We ate this with bhaturay and it was really yummy.
