Maduban vada

Maduban vada || Indian Dessert

Ingredients :
for vada:
urad dal 1 cup
rice          1 tbsp
oil for frying .

for cream
hung curd 1 cup
icing sugar 2 tbsp
fresh cream  1 cup

for sugar syrup:
sugar 1 cup
water 1/2 cup
saffron 8- 10 strands
mitha Attar 1or 2drop 
food color 1/4 ( yellow or orange)

for Garnishing;
almonds 8-10
cashew  8-10
pistacho 8 -10
raisins 20 -25
dry apricot 4-5
walnut 4-5
silver edible foil. (warak)


for vada:
1.Soak the dal and rice for 5 hour
2.After 5 hour , grind dal mixture with little water about 1/4 or 1/2 . Use less water and make a thick and fine paste. 
3.Now transfer the dal mixture into a big bowl. 

4.Add 1 or 2 tsp. water and beat it .
5.beat the mixture until it become creamy and fluffy . 
for batter test
1.Take a bowl fill with water and drop some batter into water . if batter floats in water .it means the batter is ready to make vadas . .  
2.Now , heat the oil in the pan . when oil is heated. drop some lemon size balls of batter in oil. 
3.fry vadas on low - medium flame. and fry untill golden brown. 
now transfer vadas in plate and keep it aside. 

for cream : 
1.In a big bowl: add curd , sugar and cream and beat it .
2.Beat only for 2 or 3 mins . and keep it aside. 

for sugar syrup:
1.Add sugar and water in pan and boil for 2 or 3 mins. 
2.Now Add saffron strands and mix it well and turn off the flame. 
3.Add food color and mitha Attar.  mix it well and keep it aside. 
mean while chop all nuts and keep them aside. 

Platting :
1.Take a serving bowl or plate.
2.first ,dip the vada in sugar syrup and place on serving dish. 
3.Now drop some cream on vadas and cover it properly.
4.Now dazzle some sugar syrup on cream . 
5.At last garnish with chopped nuts and silver edible foil
chill it for 15 mins and serve . it 
enjoy with family ........

1.If u have not mitha Attar ,you can use kewra or cardamom Attar  ( essence) in it. 
2.Always use chilled hung curd and cream for making cream.
