Navratna korma Recipe

Navratna Korma is a
mixture of vegetables, nuts and fruits. Navratna
korma basically origin from Mughali Cuisine. Navratna means Nine gems .This korma includes mixture of nine veggies and Fruits. Addition of Cashew paste and fresh Cream gives them rich and royal taste .
Ingredient :
2 fine chopped onion
2 medium size tomato cup into cubs
1 cup chopped capsicum ( medium size cube )
1 cup carrot chopped
3/4 cup Potato cut in medium size cube
1 cup French beans chopped
1 cup chopped cauliflower
1 cup paneer chopped
1 cup chopped pineapple
1/2 cup chopped Grapes
1/4 cup pomegranate seeds
1 tsp. turmeric
1 tsp. Kashmiri red chilly
1/2 tsp. cumin powder
1 bay leaf
1 tsp. garam masala
1/4 tsp. cashew paste ( soak 10-12 cashew in hot water for 2 hour then
grind it )
1/3 cup cashew cup into 2 piece
1/2 cup milk
1/4 tsp. pineapple juice
1/4 cup cream
Salt to taste
Oil
Method:
1. Heat 2-3 tbsp. oil in the pan.
2. Add chopped potato and fry then till light brownish color.
Transfer the fry potato in plate
3. Now add cauliflower and fry them till light brown color. Do same
with carrot, capsicum,
Beans and paneer .
4. Now add again 2-3 tbsp. oil in the pan . Add bay leaf and chopped
onion and sauté then 5 mins.
5. Now add cumin powder, coriander powder, turmeric powder and
Kashmiri chilly powder and stir it .
6. Add tomato and salt and sauté for 1 mins . Then add cashew piece
and fry then 1 min
7. Now add garam masala and cashew paste and mix it for 2-3 mins .
8. Add milk and water and mix it for 1 min.
9. Add all veggies and paneer and mix it well
10. Add chopped pineapple, grapes and pomegranate seeds and mix it .
11. Add fresh cream and mix it cook for 2-3 mins on low flame .
12. Now turn off the flame and garnish with chopped cilantro .
Serve hot with romali roti or butter naan.
