Eggless Coconut-lemon Cake No butter, No oven

Coconut-lemon cake|

No butter | No Oven

1 cup all purpose flour/maida
¾ tsp baking powder
½ tsp baking soda
¾ cup desiccated coconut
1 tbsp lemon zest
1 tbsp lemon juice
¾+1 tbsp powder sugar
1 tbsp vanills essence
¼ cup+1 tbsp canola oil/ olive oil
½ cup coconut milk

1.Place paper in the baking pan than grease butter/oil on all sides of 6” round baking pan.
2.Sieve  maida, baking powder and baking soda
3.In a bowl, Add sugar ,oil and lemon zest and beat for 2 mins..
4.Add lemon juice and vanilla essence and beat again for 2 mins
5.Add flour mixture and coconut milk and mix slowly.
6.Add desiccated coconut and mix it well.
7.Pour the batter in baking dish .
8.Preheat the oven at 180C.
9.Place the baking pan in the oven and bake for 35-45mins or until the tooth pick comes out clean.
10.Remove and place on wire rack to cool down.
11.Cut into desire shape and enjoy with tea.

Make on Gas /without oven:
1.Heat the deep bottom pan / pressure cooker on medium heat.
2.Do not fill water in pan/ cooker.
3.Place a lid/ separater( that comes with the cooker) on the pan.
4.Cover the pan with a plate (this process called preheating).and heat for 5 mins.
5.Place  the baking box  in the pan and cover the pan /cooker with plate /
cooker’s lid(Remove the whistle.
6.Bake the cake for 30-35 mins unitl the tooth pick comes out clean.

You can use any milk instead of coconut milk.

You can use lemon essence instead of vanilla essence. 

                                                       Add maida,baking powder,baking soda

                                                               Add lemon juice and vanilla essence

                                                                  Add maida

                                                                 Add coconut milk

                                                            Add desiccated coconut

                                                                  mix it well

                                                                  pour into baking pan

                                                                   Place in a deep pan

                                                                       baked cake

                                                                    cool on wire rack
