Eggless Christmas fruit cake

Eggless Christmas fruit cake


1 ¾ cup maida
1 cup brown sugar
1/3 vegetable oil( I used canola oil)
1 cup curd
1 ¼ tsp baking powder
½ tsp baking soda
1 tbsp lemon juice
1 ½ tsp vanilla essence
¼ tsp dry ginger pwd
1/4 tsp clove pwd
Small pinch cinnamon pwd
Small pinch nutmeg pwd

To prepare soaked dry fruits:

2 cup dry fruits (Dates,Tutti frutti,dried currents, figs,golden raisins,candied lemon and orange peel,dry pineapple)
1 cup orange juice
½ tsp nutmeg pwd (jayefal)
       1 tsp cinnamon pwd (dal chini)



1.Grease pan with butter or place paper than grease butter on all sides of pan.
2.Add maida, nutmeg,cinnamon,dry ginger and clove powder and mix well.
3.Add curd and brown suger and beat till the sugar is almost dissoloved.
4.Add baking pwd,baking soda and lemon juice and mix well.Leave aside for 3 mins and you will find that bubbles appear on the top.
5.Add vegetsable oil and vanilla in maida and mix well.
6.Add flour into curd mixture and mix well.
7.Preheat the oven at 160C.
8.Sprinkle 2tbsp flour in soaked fruits and fold them into batter lighty
9. pour the batter into prepared pan and bake at 50 to 60 mins or till done.
      10.Remove From oven and cool on wire rack.


1.      You can soak dry fruits in rum.
2.      Best to soak dry fruits at least for 3 days.
3.      You can use vinegear instead of lemon.
4.      You can make this cake on gas as I show in updown pineapple cake.

                              mix maida and spices

                           beat curd and brown sugar
                           add flour and spices in fruits

                  Add oil and vanilla essence in maida and mix well

               Add lemon,baking pwd and baking soda in curd mixture

                              Add soaked fruits

                                pour into cake pan

                                   baked cake

                               cool on wire rack
